Partially fermented and matured in new and old French oak barrels for six months. Just dipping toes in to the Fumé style.
Katnook Estate, Sauvignon Blanc, Coonawarra, 2018
Light gold hue (with thanks to the partial barrel work). Doughy yeasty lees work off grapefruit skin and rock melon, gooseberry and some woody influence. Exacting in its steps. There’s balance and texture with very pleasant oak influences over the green fruit lines that never become shrill. A thinking person’s SB.
