The first release from Matt Burton for 2020. With the Wild, he employs natural (wild) fermentation and allows the wine time on skins, and leaves a hint of residual sugar to create texture and a little richness which is usually not seen in young Hunter Valley Semillon.

Soft waxy notes over pure lemon, lemongrass with a biscuit-crumb cake base, green apple skin and peach slices, retaining a pure water-like refreshment. A wonderful juxtaposition on the palate with initial slippery peach like richness transforming into a tense, tight, tactile tail and a wisp of verbena tea to close. Encrusted with touch of salinity causing pleasurable salivation.
