Hunter Valley Chardonnay fruit was hand picked from a 50 year vineyard, Dirt Candy’s The White Knight Pétillant Naturel (or Pét-Nat if you will) is a naturally sparkling wine. The base wine went through wild fermentation, then bottled 12 days later when almost complete. Left for three months with the fermentation completing in the bottle to give the natural spritz.

Pale, yet bright lemon curd in colour. Showing some leesy sediment that remains in the bottle which allows you to serve it as funky as you’d like. Consistent mousse and bead. Fruity, crisp and puckeringly tart. Green apple, white nectarine, grapefruit juice, mushy tropical melon and both lemon and almond icing. The tail is brisk and tight. Tasting more like a cheeky adult lemonade with a fine chalky finish.
