100% Wild ferment (that fact is still mind blowing for the sheer volume they produce). The colour is light to pale yellow with that alluring green highlight. Aromatic zesty ginger spice, yellow and white stone fruit flesh, white pepper and orange oil. Satiny and smooth (rather than waxy) palate with a hint of phenolic grip and fresh acidity. An accessible entry way to the exploration of the variety.
