The Bizots put a lot of care and attention into making their flagship Sauvignon Blanc. This years sees only partial whole bunches in the press, with the rest crushed and destemmed. 62% into old French oak barrels for fermentation (the rest into stainless steel). No malolactic fermentation. 8 months maturation on full lees before blending and bottling. Note: Bottle image is of 2024, but nought has changed except the vintage year.
Terre à Terre, Crayères Vineyard, Sauvignon Blanc, Wrattonbully, 2025
Pale lemon hue with green highlights. Layered and complex. Varietal passionfruit seeds before almond husk, saltwater brine, citrus pith, fresh asparagus, spring blossom, candle wax, guava chunks, dewy young grass and sweet spice. Generous fruit layered neatly with the textural winemaking elements delivers a wine with balance and persistence. Tight and tense, even with the broader vintage profile. Saline, dry long finish punctuating the citrus and tropicals. Chalk up another stellar release.
