Sees a combination of de-stemmed berry and whole bunch fermentation, then spent fifteen days on skins. 2016 was a “warm and fast vintage” before late January rains cooled the region.
Shaw and Smith, Pinot Noir, Adelaide Hills, 2016
A slightly muted nose with cinnamon and brown spice, stewing cherry and light rose petals. Savoury spice with subtle Fruits of the Forest. The structure isn’t quite as elegant as previous years, but still quality abounds.
