The bubbles sway slightly in the glass as they reach for the surface. A distinct salted caramel note along with lemon drop/boiled lolly bittersweet-ness with lavender flower and peach. Grippy and almost robust on the palate, there’s a delicious interplay between acidity and sweetness that culminates with honey laced stonefruit and brine. Pair with fresh scallops, just pan-fired to translucent with a dash of lemon grass, chilli and kaffir lime.
