De Bortoli set out a few years ago creating a wine specifically to match big protein rich meals (beef steak or mushroom for the plant based dieters) that had that distinct woodfired/chary character and thus produced the Woodfired Shiraz as the first edition. There has since been a Sparkling Shiraz produced and of course, to partner the Cabernet Sauvignon.

Deep garnet heart with a bright rim. Plush and approachable Cabernet aromas: Rich blackberry off-set with well judged, cedary yet still sweet oak and the right amount of ashen earthy leaf. Medium-full bodied. Plump dark/purple fruit profile well carried with firm, supple, just-drying tannins leading to an overall satiny texture. Pulses with good energy and calls to be partnered with protein, though it’s made well enough to be served by the glass on its own. Drink now to the next 3 years.
