A sibling for the straight Signature Shiraz. Shiraz matured in American oak (60% new) while the Cabernet was matured in French and American: A third new, a third 1 year old and a third older.
Huntington Estate, Tim Stevens Signature , Shiraz, Cabernet, Mudgee, 2017
Deep garnet, heart to rim. Powerful, yet alluring perfume. A complex amalgam of dried and fresh fruits/spices over fistfuls of dark berries and dark drinking chocolate, a hint of mint with a lick of vanilla bean paste. Bold, profound palate: square shouldered with tightly woven, toothsome tannin but not with an attractive suppleness. Flavours run the same as the aroma and trail on for some time. Very good now with some life ahead of it.
