While Seville Estate are rightly praised for their red wines, this 100% Chardonnay sparkling is an incredible razor sharp vinous weapon to have their armoury. Aged for 30 months on lees.

Excited and effervescent bead that doesn’t diminish at all over time in the glass. Neat, tight just ripe stone fruit, with richness of light honey with easy mealy notes. On the palate, this is a delicately framed expression with incredibly clean lines packed pulsatingly tight and balanced savoury, autolytic depth. The acidity beautifully retained to provide fine refreshment. This does indeed sparkle.
