Some whole bunch and whole berry fermentation. 8 months in French oak with around 20% new. Winemaker is Dylan Lee, while renowned Darryl Caitlin consults.
Sidewood Estate, Pinot Noir, Adelaide Hills, 2025
Deep colour, almost opaque garnet. Showing plenty of flesh: dark plum and cherry fruit, nearing maraschino cherry. Richness of Danish pastry, before Negroni like amaro and orange herb, malt, truffle and roast beetroot earhthiness. Studded with spice, flesh and heft. Drying dark red fruit, savoury, umami and earthy undertones. Showing some vintage influence, there’s a spike a warmth through the tail with fine tannins. Mushroom risotto or duck pancakes would make a great match.
