Ahhhh Sparkling Shiraz. A Guilty pleasure of mine when done when well. Most save it for Christmas time, but it has a place with BBQ low and slow beef, braised beef cheeks, alpaca pie, rich chocolate desserts, bacon breakfast sandwiches and, as I found out: with spicy beef tortillas in a rich Mexican inspired sauce.
Shingleback, Black Bubbles, Sparkling, Shiraz, McLaren Vale, NV
Deep plum sauce, liquorice, blackcurrant essence, meaty roast pan jus, some deep balsamic, No light giggle juice, this is a serious sparkling. The underlying fruit is obviously quality and presents a great balance between slick dark sweetness, cutting tight bubbles, fine grainy tannin with needley acidity. A dry finish with a yeasty, bitter chicory complex edge. Versatile to many food matches.
