Champagne Deutz, Brut, Rosé, Champagne, NV

3 years on lees. Pale peach to wan cerise hue. Excited, seemingly irrepressible beading. Cherry Danish, pink chalk, dried rose petal, yellow peach fruit, ruby grapefruit and soft match strike flintiness. Soft and easy mousse leads to a tight mid palate. Good interplay of texture and fruit with a chalky dryness. Sharp acidity just a little jarring for the moment, but a perfect rapier for fresh tuna sashimi.
