The St Hubert‘s sparkling program started in earnest in 2010. 100% Pinot Noir fruit from the Yarra Valley. Over 5 years on lees. Winemaker is the affable Greg Jarrett. A cellar door special only.

Pale pink salmon. Soft brioche with strawberry Danish pastry, cherry flesh, pink lady apple and peach skin. Easy mousse with fine delicacy. Fruit carries through a good length with vibrant acidity.
