Wild ferment in French oak (20% new). Nine months maturation on lees. Winemaker is Dylan Lee, while renowned Darryl Caitlin consults.
Sidewood Estate, Chardonnay, Adelaide Hills, 2025
Opens with savoury, nutty cashew nose. Fleshy grapefruit to white stone fruit richness. Oak gives a little vanilla and white bread toast. Grapefruit pith, lemon rind and black tea. Fine and tight structure. Barrel work savoury and nutty influences under the white stone fruit and juicy bittersweet citrus. Some gunflint and struck match crispness with bright, fresh acidity. The tail is neatly balanced through a medium length finish. Tidy and enjoyable.
