The flagship sparkling for Blue Pyrenees, there’s 18% Macedon Ridge Vineyard fruit (Chardonnay and Pinot Noir) included from the cooler Macedon Ranges blended with the Estate Chardonnay. The fruit handpicked at night under lights (hence the naming). Traditional Method and Blanc de Blancs style.

Rich and expressive nose with plenty of lemon zest, lemon sherbet and short-crust pastry, pomme (pear/apple) fruit skin and some yeasty autolytic depth. Well structured and textured with plenty of youthful acidity still burning bright through rich layers of fruit. Shows depth and power without being blousy or overblown and finishes with a moreish briny tang.
