Medium straw gold colour with fast beading. Developing rich aromas of lemon cheesecake, white toast crust and sweeter brioche, deeper elements of salty bacon fat and warm butter, spiced apple and a touch of marzipan. The richness on the nose seems a façade as the palate delivers classy straight lines with a blown wish from a dandelion’s flower of mousse dissipation. Tightly packed in with intense citrus and a just-chalky finish that lasts long. Rightfully at the pointy end of Tasmanian sparklings.
