A pre-release look (the 2019 is still on the d’Arry website) so I can only think they’ll keep to the 4%ish wild ferment this with around 14% of the Viognier fermented in aged French oak.

Ripe and lifted apricot stone fruit, ginger beer, apple skin, rose water, peanut brittle, malt and a little sea spray. Carrying an upfront viscosity and weight that are tempered at the finish with tart Granny Smith apple bite and a gritty texture. Serve cool with Thai ginger fish fillet.
