Matt Burton and the team throw out the Hunter Sem textbook with this one. Indigenous yeasts, some parcels clean fermented in tank (and retaining a little sugars), other parcels kept cloudy in barrel ferments and 30% of the fruit parcels with time on skins. With such diversity, can there be cohesion?

Medium pale lemon in colour. Green apple, white peach, crushed lemongrass, lime juice, roast hazelnut and green tea. The juxtaposition is delicious. Tight and fragrant with waxy phenolics sliced apart by sharp acidity with a slick feel thanks to the residual sugar. Lip smacking appeal from savoury winemaking influences balancing out sweetness and acidity. Definitely a sum of its parts.
