The flagship sparkling for Blue Pyrenees. Chardonnay and Pinot Noir included from the cooler Macedon Ranges blended with the Estate Chardonnay. The fruit handpicked at night under lights (hence the naming). Traditional Method and Blanc de Blancs style. The winery has rolled their vintage, unfortunately sometimes this writing game doesn’t quite keep up.

Continues the signature Blue Pyrenees richness with plentiful rich citrus: lemon tart, pomme (pear/apple) fruit skin, salt lick, easy cherry, earthy truffle, sweet creamy lees work and a streak of yeasty depth. 5 years still showing youthful acidity. Cool climate structure: balanced richness with chalky texture and the finish kicking with the briny tang.
